Green beans prepared with traditional indian spices. Tastes great with whole frozen green beans from Trader Joe’s.
Ingredients:
| 3 | tablespoon | canola oil |
| 1 1/2 | teaspoon | cumin seeds |
| 1 | medium | onion (white) |
| 1 | inch | ginger |
| 2 | chiles (green) |
|
| 2 | medium | tomatoes |
| 1/2 | teaspoon | chili powder |
| 1/2 | tablespoon | coriander powder |
| 1/2 | pound | green beans |
| 1/2 | teaspoon | salt |
| to taste | cilantro |
Directions:
Heat the wok over medium high heat and add oil. Add cumin seeds, onion, ginger, and chilies and sauté till onions are slightly brown on their edges, about 3-4 minutes.Mix the tomatoes, chili powder, and coriander and stir fry for 1-2 minutes.
Add the green beans, stir frying for another 2-3 minutes. Add the salt and reduce the heat to low. Cover and simmer for about 20 minutes, or until beans are firm but tender. Serve immediately, garnished with coriander.
