Mexican Appetizer

Salsa never tasted so good — and so different. Great for the summer. Would recommend grilling over open BBQ flame, but broiling may work as well.
Ingredients:
| 3 | large | tomatoes |
| 2 | jalapeno pepper |

| 1 | medium | onion (red) |
| 4 | clove | garlic |
| 1 | lime |
|
| 1/2 | bunch | cilantro |
| 1/2 | teaspoon | salt |
Directions:
1) Roast garlic in oven for 30 minutes at 400 degrees by wrapping cloves tightly in foil. They should be soft and golden in color.
2) Place whole tomatoes, quartered red onion, and whole jalepenos on grill and turn frequently until they begin to soften and skin turns black.
3) Blend all of the above in a salsa maker or blender. Be careful not to blend too thin.
4) Add salt and squeeze lime juice to taste.
5) Place in refrigerator for at least 2 hours until cooled.
6) Add chopped cilantro to taste.
7) Enjoy with authentic Mexican corn tortilla chips.
