This takes forever to make, making because it needs to simmer for so long….but the end result is worth it!


Ingredients:

8 cup vegetable stock
3 tablespoon brandy
6 slice french bread
1 cup swiss cheese grated
to taste salt
to taste black pepper ground
1 tablespoon butter (low fat)
2 tablespoon olive oil
2 pound onion (yellow) sliced
3-4 clove garlic chopped finely
2 tablespoon flour (white)
3/4 cup wine (white)

Directions:
1. Melt the butter with the oil in a large, heavy pan over medium heat.

2. Add the onions and cook, covered, for 10- 12 minutes until they soften, stirring

occasionally. Add the garlic and sprinkle with salt and pepper.

3. Reduce the heat a little and continue cooking, uncovered, for 30- 35 minutes, or until the onions turn a deep golden brown, stirring from time to

time until they start to color, the stirring more frequently and scarping the bottom of the pan and stirring to combine.

4. Reduce the heat to low, add the brandy (could be substituted with cognac) and simmer gently, stirring occasionally for 45 minutes.

5. Toast the bread under a preheated hot broiler on one side. Turn over and top with the cheese, dividing it evenly. Broil until the cheese melts.

6. Place a piece of cheese toast in each of the 6 warmed bowls, and then ladle the hot soup over. Serve at once.
