The only reason this delicious, healthy soup takes so long is because it has to be simmered till the vegetables become soft. Don’t be scared by it’s rather mushy appearance- it tastes really good!:)


Ingredients:

1 tablespoon olive oil
1 tablespoon garlic crushed
2 tablespoon cilantro chopped
1 1/2 tablespoon chile garlic paste
1 medium onion (yellow) chopped
3 medium carrot sliced
1 medium potatoes chopped
5 cup vegetable stock

Directions:
1. Heat oil in a large pot over medium heat. Heat garlic, cilantro and chili paste.

2. Add the onion to this and saute the mix until onions become tender.

3. Stir in carrots and potato; cook for 5 minutes and then pour in vegetable broth.

4. Simmer for 30 to 45 minutes, or until potatoes and carrots are soft. Let the soup cool for a bit, then pour the mixture into a food processor and blend until smooth. (A hand blender could also be used, alternatively).
