Quite easy dish to make, only needs to be planned ahead of time, due to the overnight refrigeration. But it is well worth it!!


Ingredients:

1 loaf cinnamon-raisin bread sliced
3 cup milk
8 egg, or 2 cups egg substitute
1 cup half and half
1 cup sugar
1 tablespoon vanilla
1/8 teaspoon nutmeg ground
8 ounce cream cheese, fat free softened
8 ounce cream cheese, 1/3 less fat softened
cooking spray
cinnamon-sugar , optional
to taste frozen fruit(s) , optional

Directions:
Trim crusts from bread. Arrange half of the bread in a 9×13 inch baking dish coated with cooking spray.

Combine milk, 6 eggs, half and half, and 1/2 cup sugar in a large bowl, stirring with a whisk. Pour half of mixture over bread.

Combine 2 eggs, 1/2 cup sugar, vanilla, nutmeg, and cheeses in a food processor or blender. Process until smooth. Add frozen fruit, mix well and over moist bread in dish. Top with remaining bread; pour remaining milk mixture over bread. Cover and refrigerate 8 hours overnight.

Preheat oven to 350 F.

Let the dish come to room temperature about 30 minutes. Uncover and bake for 55 minutes. Let stand for 10 minutes before serving. Sprinkle with cinnamon-sugar, if desired.
