Greek Soup

It is preferable to cook this soup in a crock pot. You can drain and add a can of white potatoes about half an hour before the soup gets done.
Ingredients:
| 500 | gram | lentils |
| 1 | large | onion (red) |
| 6-8 | clove | garlic |
| 5-6 | medium | carrot |
| 2 | cup | vegetable stock |
| 1/4 | cup | olive oil |
| 1 | can | tomatoes, |
| 5-6 | bay leaves |
|
| to taste | thyme |
|
| to taste | salt |
|
| to taste | black pepper |
|
| to taste | crushed red pepper |
|
| to taste | cumin powder |
Directions:
1. Wash lentils.
2. Cook the lentils in a large pan along with the onion, carrots, garlic and vegetable stock.
3. Add 3 to 4 cups of water and bring to a boil. Simmer the lentils for 90 minutes.
4. Add all the other ingredients and continue to simmer for another 4 hours.
