It is preferable to cook this soup in a crock pot. You can drain and add a can of white about half an hour before the soup gets done.


Ingredients:

500 gram lentils
1 large onion (red) chopped finely
6-8 clove garlic sliced thinly
5-6 medium carrot sliced
2 cup vegetable stock
1/4 cup olive oil
1 can , (spiced)
5-6 bay leaves
to taste thyme
to taste salt
to taste black pepper crushed
to taste crushed red pepper
to taste cumin powder

Directions:
1. Wash lentils.

2. Cook the lentils in a large pan along with the onion, carrots, garlic and vegetable stock.

3. Add 3 to 4 cups of water and bring to a boil. Simmer the lentils for 90 minutes.

4. Add all the other ingredients and continue to simmer for another 4 hours.
