I’d never seen a peanut sauce with massaman curry paste in it, but it really makes the flavor quite nice.
Ingredients:
| 13.5 | ounce | coconut milk canned |
| 1/4 | cup | massaman curry paste |
| 1/4 | cup | fish sauce (nam pla) |
| 2 | tablespoon | sugar |
| 2 | tablespoon | vinegar (white) |
| 1/2 | cup | peanut butter, crunchy |
| 1.5 | cup | water |
Directions:
1. Heat 1/2 of coconut milk in a sauce pan over low heat, Stir in Masaman curry paste
2. Keep stirring until the paste break down. Cook for couples minutes. Add fish sauce.
3. Add sugar, vinegar and peanut butter. Stir and cook until everything is well blended.
4. Add water and turn the heat up a bit to bring it to a boil. When the sauce thickens, Add the rest of the coconut milk, stir and turn off the heat.
5. Serve as dipping sauce or as dressing.
