I’d never seen a peanut sauce with massaman curry paste in it, but it really makes the flavor quite nice.


Ingredients:

13.5 ounce canned
1/4 cup massaman curry paste
1/4 cup fish sauce (nam pla)
2 tablespoon sugar
2 tablespoon vinegar (white)
1/2 cup peanut butter, crunchy
1.5 cup water

Directions:
1. Heat 1/2 of coconut milk in a sauce pan over low heat, Stir in Masaman curry paste

2. Keep stirring until the paste break down. Cook for couples minutes. Add fish sauce.

3. Add sugar, vinegar and peanut butter. Stir and cook until everything is well blended.

4. Add water and turn the heat up a bit to bring it to a boil. When the sauce thickens, Add the rest of the coconut milk, stir and turn off the heat.

5. Serve as dipping sauce or as dressing.
