Ingredients:
| 2 | pound | cod filet |
| 1.5 | inch | ginger minced |
| 1.5 | teaspoon | turmeric |
| 1/4 | cup | vegetable oil |
| 3 | medium | tomatoes cubed (large) |
| 2 | medium | onion (red) chopped finely |
| 5 | clove | garlic minced |
| 2 | teaspoon | chili powder |
| 1 | chiles (green) | |
| 1.5 | tablespoon | fish sauce (nam pla) |
| 1/4 | cup | vegetable stock |
| 1/2 | cup | cilantro |
Directions:
1. In a mixing bowl, marinade the fish with salt, pepper and turmeric for five minutes.
2. In a frying pan, heat the oil and mix in the onion till lightly brown. Add in ginger and garlic till fragrant. Add in the chiles, then immediately the fish and let it get seared. Then, stir in tomatoes, liquid stock and cook for five minutes.
3 Lower the heat and add fish sauce, coriander stems and simmer for another2 minutes.
4. Garnish with cilantro leaves and serve hot with steamed jasmine rice.
