This is a salad you can whip up just before leaving for work (which I did) and I had a yummy healthy lunch at work (which I usually don’t).
Ingredients:
| 1 | bunch | aragula chopped roughly |
| 10 | leaf | spinach (baby) |
| 1 | cup | couscous cooked |
| teaspoon | feta cheese crumbled | |
| 5-6 | mushroom (button), baby bellas sliced | |
| 3-4 | olives (kalamata) chopped | |
| 1 | pinch | garlic powder |
| 1 | teaspoon | olive oil |
| 1 | teaspoon | vinegar (balsamic) |

Directions:
1. Combine the ingredients.
2. Give it a good toss
3. Add salt, pepper to taste
4. Chill in the refrigerator for cooling.
