Chickpeas with Baby Spinach

This is a easy to put together dish that can be had with couscous or on a thick slice of roasted bread, as we usually do. The author suggests rubbing garlic on the bread. Seems like a great idea :-)

Tlayuda with Black Bean Purée

You can do pretty much anything with the toppings here. If you want to make it vegetarian, use or anything you fancy. We added the corn although it was not part of the original recipe. You can also use any other crumbly cheese like queso fresco or feta. We also added cilantro when we made it.

Cilantro Hummus

Great for sandwiches as a spread! Just slice cucumbers, tomatoes, onions; put them in between two slices of bread spread with liberal serving of the cilantro hummus. Tastes just like chutney sandwich!! This is basically the sandwich called “Mediterranean Veggie” s/w at Panera.
