Enchilada Sauce

Ok, so the picture is of the whole enchilada, but I figured better to see the in action than just by itself!  This is the promised enchilada recipe from the ancho chili post.  It comes after a series of tweaks and tests.  This is a great example of an item that should not be bought in a store, simply because it’s too easy and tasty to make it yourself.

Spicy Plum Sauce

I also added back the water in which the plums were boiling to add volume. If you want, you can add half a teaspoon of cornstarch to thicken it.

The goes very well with sauteed , vegetables, diced and sauteed/browned breast pieces or simply something to put on noodles/fried .

Simple Marinara Sauce

I made this one day when we realized at the last minute that we had no tomato for a dish we had already started making. It’s quite simple and very tasty. I used canned , but if you have fresh ones (that are nice and sweet), use those.

Ginger, Garlic, Scallion Stir Fry Sauce

To be truly authentic, use Chinese shaoxing wine instead of dry sherry.

The sauce tastes great with and red pepper, or some Chinese eggplant. I haven’t tried it with meat, but that should work well too.
