Chilled Avacado, Tomatillo and Cucumber Soup

The only reason I put the preparation time at 60 minutes is because of the saffron-lime ice. If you have that made beforehand, the soup itself shouldn’t take too long. Use toasted slivered almonds for this soup.

Roasted Veggies Mediterranean Soup

Time to roast veggies: 50 mins to an hour
Time to put soup together/sauteeing/cooking -20-30 min
Time to slow-cook soup in oven – 2-3 hours.

This soup takes a long time to make but trust me, its rewarding as hell. I served it to a bunch of bengalis who rarely like anything other than mach-bhat and they loved it. The peppers add sweetness and the slow-cooking brings everything out. The only time you actually have to be cooking is 30 mins or so, the rest of the time you can do other things.

Tortilla Soup

To add desi flavor, I added some coriander seeds too. It really gave the soup a kick!
I make this soup using almost everything canned/frozen. I reserve this soup for days when I’m out of fresh vegetables but don’t have time to make a trip to the grocery store. The soup uses all the canned stuff I stock up on for precisely such a day!

When I made it, I didnt grind the along with roasted veggies, although the recipe said so. It takes a while for the to cool down and I was short of time. However it tasted pretty good so you might want to try it that way too!

The only reason this delicious, healthy soup takes so long is because it has to be simmered till the vegetables become soft. Don’t be scared by it’s rather mushy appearance- it tastes really good!:)
